This treatment is done to make the loin still have their colors even after a long time. It is done by using cold smoke method with filtered wood smoke as the material. When the skipjack loin is not processed with this CO treatment, the color of the tuna meat will turn into brown gradually. This will make the tuna meat not appear fresh anymore thus people would not want to purchase it. That is why the treatment is needed to keep the fresh red color stays on the skipjack tuna loin CO treated product even though it does not change any other things. Now the skipjack loin co treated is ready for the next processing line.
Meanwhile to make the pre cooked skipjack loin, the skipjack loin from cutting processing line will be put inside pre cooker machine which will steam the meat in vacuumed condition and cool it down before being send into the next processing line.
The last processing line that both skipjack loins going through is the packing line. In here the skipjack loin will be packed individually inside vacuumed pack. Then it will be frozen in in -40 degree Celsius temperature to ensure the skipjack loin products stays fresh for longer time.
